Celsius, Fahrenheit and Kelvin explained
Celsius is based on water freezing at 0° and boiling at 100°. Fahrenheit, used in the US, puts those points at 32° and 212°. Kelvin is the scientific absolute scale: 0 K is absolute zero, and one kelvin is the same size as one degree Celsius, so you simply add 273.15.
Common conversions
Oven: 200 °C ≈ 392 °F. Fever: 38 °C = 100.4 °F. Freezer: −18 °C ≈ 0 °F. Room temperature in science is often 298.15 K (25 °C). Note that −40 is the same in both Celsius and Fahrenheit.
Temperature in cooking
European and many international recipes give oven temperatures in Celsius, US recipes in Fahrenheit, and fan ovens usually need about 20 °C (35 °F) less than conventional ovens. Converting carefully prevents burnt or undercooked dishes.
